Chicken Kabsa

Ingredients

  1. Onion (cut into small pieces) – 1 piece
  2. Chicken – 1 kg
  3. Tomato (cut into small pieces) – 1 piece
  4. Oil – 2 table spoon
  5. Tomato paste – 2 table spoon
  6. Salt – 1 table spoon
  7. Cinnamon stick – 1 piece
  8. Gloves – 3 pieces
  9. Cardamom – 3 pieces
  10. Black pepper seed – 1 table spoon
  11. Coriander seeds – 1 table spoon
  12. Cardamom – 1 table spoon
  13. Coriander – 1 table spoon
  14. Turmeric – 1 table spoon
  15. Basmati rice – 250 gm
  16. Kabsa spices (if not available ) make ur owns simply and fresh made ,
  17. Nuts are optional , you can use deep fried nuts like cashew nut, almonds, pine nuts or raisins

 

Instructions

  1. Heat cooking oil, add hard mixed spices above stir for about 3min ,add minced onion for about 3min , add the tomato and stir till its a smooth paste then you can add chicken , tomato paste , powder spices and salt.
  2. Add 1 liter water bring to boil for about 35mins
  3. Remove chicken in an oven tray and roast it for 20min to get the golden color
  4. Add the soaked rice to the stock and let it boil at high heat for 2mins , then cover and reduce it at a very low heat for 30mins.
  5. In a serving plate add the rice on top chicken , serve when hot. Enjoy!

Notes

  1. Chill before serving.
